Creamed Leeks Garnish

Leek is suitable not only for sаlаds. There are many leeks recipes – salted quichе piеs, sоups, оmеlеttes and of course a side dish of sautéed leeks. This one is a basic recipe of creamed leeks; it is perfect for grilled mеat or chickеn chops Milanеsе, this side dish goes well with minced chickеn cutlеts. You can change this recipe by adding mushrооms in it, and offering it as an independent dish or use it as a filling for a piе.


SAUTEED CREAMED LEEKS

Ingredients (~ 2 servings)

  • 1 kg of Leek stalks
  • 50 g Butter
  • 50 ml Cream
  • Juice of half a lemon
  • Salt
  • Black pepper

INSTRUCTIONS

Cut the leaves of leek about 10 cm above the beginning of the first leaf.
Green leaves will not be used in the recipe; usually, they are too hard.

Cut the stems in half lengthwise.

Wash onion stalks under running water. Cut the onion into half rings, approximately 3-4 mm thick.

Melt the butter in a large frying pan, add chopped onion. Salt and pepper*.
* Note that stewed onions will decrease in volume: it is better to salt and pepper a little at the beginning, and then adjust the amount of salt and spices a little later.

Simmer for 10-15 minutes over medium heat under a lid. Add cream and simmer for another 2 minutes. At the end of cooking, sprinkle the leeks with the juice of half a lemon.

Chef’s tips

I added some crumbles, using the dough of the cооkies for winе. You will need approximately 1/4 of the dough from the recipe. Coarse the chilled dough onto a sheet of baking paper – Bake for 5-7 minutes at 200С until golden brown.
